Barbecuing will take on a distinctly gourmet flavour this summer with the arrival from France of a ceramic grilling stone that retains delicate flavours and natural juices while eliminating uneven cooking and charred 'hot spots'.

Barbecuing will take on a distinctly gourmet flavour this summer with the arrival from France of a ceramic grilling stone that retains delicate flavours and natural juices while eliminating uneven cooking and charred 'hot spots'.

The Emile Henry grilling stone is a ribbed ceramic plate that sits on top of the barbecue plate or grill and features slots to hold eight kebab skewers.

The stand out feature of the grilling stone is that it ensures completely even heat distribution - there are no hot spots! - and it prevents any oil or fat dripping onto the flames, which inevitably causes a flare-up that results in charred food!

The grilling stone can be used with the eight metal skewers (supplied) for kebabs or as a general grilling plate for meat, fish, vegetables and fruits. It can then be taken direct to the table for serving (place on a heat-resistant surface).

The skewers feature an angled end to facilitate the piercing of ingredients - the slots in the sides of the plate ensure the skewers can be turned easily and regularly for even cooking.

The benefits of the ceramic grilling stone are considerable - even heat distribution ensures all food on the stone, no matter where it is placed, cooks evenly; delicate or fragile dishes, such as seafood, can be turned without breaking; natural flavours and juices are retained; clean-up is so much easier.

Emile Henry is renowned worldwide for its extraordinary handfinished ceramics. Its technology, refined over more than 160 years, has resulted in a superior glaze that will withstand temperatures up to 500°C and won't craze, scratch, discolour or stain. The brand's grilling stone is no exception - metal implements can be used to turn and cut on it without any risk of scratching. The plate, which is 30 per cent lighter than cast iron, features oval handles to provide a comfortable grip. The stone is also completely dishwasher safe.

The Emile Henry Grilling stones, available in black and red, are 42cm x 25cm and retail for $94.95. They are available nationally at leading department stores and kitchen ware retailers. Consumers can call the distributor (DKSH) on 02 8884 6000 for details on local stockists or go to www.emilehenry.com
